I first made this recipe in college in a cooking class. It has stuck with me for all these years, especially during apple season. So I have decided to share it here with you.
1 C + 2/3 C. Flour
2 tsp baking powder
1 tsp cinnamon
14 tsp salt
4 tbs. brown sugar
1 tbs oil
2 tbs honey
2/3 c. milk
1 egg
1 med apple peeled and chopped into chunks
Put all dry ingredients in a bowl and mix well, make a well in the center. In a seperate bowl, mix together ; oil, honey, milk and egg. Add wet ingredients to dry and mix until just moistened. Add apple, mix gently, spoon mixture into muffin tins. (2/3 full). Bake 20-25 minutes at 375.
